- In a small bowl beat the eggs and set aside.
- Heat a wok with sesame oil, and add in the garlic, chilli, star anais and red onion. Cooked for 3-4 minutes or until the onions have softened.
- Add in the peas, mushrooms and spring onion and cook for 5-10 minutes, remove from the pan and set aside.
- Next using the same wok add a little more sesame oil if needed and pour in the eggs. Scramble them over a gentle heat.
- Add in the salt, pepper, vinegar and soy sauce. Mix well.
- Next add in the egg noodles and vegetables back to the wok. Season with more salt and pepper if needed.
- Increase heat to high and toss fry for two minutes. Serve immediately.
