Reduce your water by about half a glass if you will put your Pilau in the oven to dry up or if you will put hot charcoal on the lid for the rice to dry up. This method makes the rice dry up so well.
Steps to make 2kg Rice Pilau:
- Caramelize the onions then add garlic and ginger until cooked.
- Add the mutton and cook until it looses its water. Salt it.Add the Pilau Masala and Cummin Powder. Let it cook for approximately 20min. Add the potatoes and approximately 10min
- Add the diced tomatoes, grated carrots, chopped Capsicum and cook.
- Add hot water 9 cups for 5 cups of rice. Bring to boil then add the rice. Bring to boil then lower the heat and check up on the rice every 5 min
- Finally as the water reduces, add garnish i.e the dhania
Once the water has boiled, add your rice. This type of rice does not have any unique flavour and requires more water if being cooked in an open sauce pan. It is best suited for cooking pilau, biryani or any other modification of brown rice as the grains tend to remain separate even when cooked. When this happens, remove the rice from heat and drain away from the water. The half cooked rice is ready to cook together with marinated chicken.
