  2. Prepare 1 cup soaked chana dal
  3. Prepare 1/2 cup turmeric powder
  4. Make ready 10 garlic cloves
  5. Take 1 inch ginger
  6. Make ready 3 green chillies
  7. Get 1/2 cup finely chopped mint leaves
  8. Make ready 1/4 cup finely chopped coriander leaves

  10. Prepare 2 tbsp ghee
  11. Get 3-4 dry red chilli
  12. Get 1 tsp black pepper
  13. Prepare 4 cloves
  14. Prepare 1 inch cinnamon stick
  15. Get 3-4 cardamom
  16. Take 1 tsp sauf (fennel seeds)
  17. Get 1 tsp ajwain (carrom seeds)
Steps to make Hyderabadi Mutton shaami kebab:
  1. Heat ghee in a pressure cooker and add dry red chilli Ajwain sauf cardamom cinnamon black pepper garlic cloves ginger and sauté for few seconds.
  2. Now add boneless mutton/ keema and sauté for a min. Here I have used keema.
  3. Soak chana dal in water for 4 hrs. Now add soaked chana dal turmeric powder salt and little water.
  4. Pressure cook the keema and dal for 2 whistles. If you are using boneless mutton then cook for 5 whistles.
  5. Once done allow the mixture to cool.
  6. Now add chopped mint and coriander leaves and green chilli and add the mixture to the jar and grind into a coarse paste for a second.
  7. Once done add finely chopped onion and mix gently and make round shape kabab.
  8. Heat ghee in a fry pan and place the shaami kabab and shallow fry until golden brown from both sides on a low medium flame
  9. Transfer the mutton shaami kabab into a serving plate and serve hot. Serve with dhaniya mint chutney and salad.
