- Make ready 3 tbsp ginger garlic paste

- Prepare 2 cinnamons
- Prepare 2 bay leaves
- Take 1 tsp shahi jeera
- Take 7 cups water

- Prepare 2 cardamoms
- Prepare 2 bay leaves

- Take 2 inches cinnamon
- Prepare 1 star anise
- Take other ingredients:
- Make ready 1 cup fried brown onion
- Make ready 4 tbsp coriander leaves
- Get 4 tbsp mint leaves
- Take 3 green chilli
- Get 3 big chopped onion
- Get 3-4 tomatoes
- Make ready 2 tbsp red chilli powder
- Get 1 tbsp corrainder powder
- Make ready as per taste Salt
- Prepare 1 tbsp garam masala powder
- Take 4 tbsp oil
Steps to make Dum Mutton Biryani:
- For mutton, marination take a bowl add mutton and all marination ingredients and marinate in the refrigerator overnight.
- Wash and soak Basmati rice for 1 hour. Take a big pot vessel add water and whole spices and salt bring it to a boil add basmati rice and cook 70% and drain it to a colander
- For Mutton gravy- In a pressure cooker add oil add whole spices once get fragrant add onion and saute. Once get transculent add tomatoes and cook. Add dry masala and saute till oil releases add Mutton marination half coriander mint leaves brown onion fry and 1 cup water and cook it to a 3 whistle. Check once pressure cools down whether Mutton cooked.
- Once pressure cools down take a deep pot vessel for layer. Add half layer of basmati rice.over it add Mutton gravy sprinkle mint leaves corrainder leaves brown rice and spread it. Over it add other half rice corrainder leaves mint leaves brown fried onion and 2 tbsp of ghee and place the heavy lid over it. Just place bowl fill with water over it. You can also seal with atta or alluminium foil. Heat and cook pot in a high flame for 5 mins After that heat tawa and place pot on it
- Cook 15 minutes in low flame and off the gas. Allow it to rest for 15 minutes. Serve Mutton biryani with raita and brinjal khatta.
- For onion deep fry- take oil in a pan once oil get heat fry onion slice till golden brown. Keep stirring it to get same colour
