  1. Take 200 grams Mutton Pieces
  2. Get 1 Chopped Onion
  3. Make ready 1 Chopped Tomato
  4. Prepare 1 tsp Ginger Garlic paste
  5. Make ready 1 Tbsp Red Chilli Powder
  6. Prepare 1 Tbsp Coriander Powder
  7. Take 1 tsp Turmeric Powder
  8. Get 1 tbsp Sesame Oil

  12. Prepare as required coriander leaves
  13. Prepare To Make Paste
  14. Take 2 Pieces Coconut
  15. Get 1 tsp Poppy Seeds
  16. Take 1 tsp Fennel Seeds

  18. Make ready 1 tsp Cumin Seeds
  19. Make ready 1 Bay leaf
  20. Get 1 Small stick Cinnamon
  21. Get 4 cloves

Chettinad mutton kuzhambu or chettinad mutton curry is a spicy, hot and aromatic dish which is flavoured with aromatic and distinctive spices like dagad phool (kal pasi or black stone flower). Steps to make Mutton kuzhambu:
  1. Heat a tbsp of oil in a pressure cooker. Add the Curry leaves and items under Spices, saute for 45 seconds and then add the chopped onions.
  2. Then add the ginger garlic paste, saute for a minute and add the chopped Tomatoes. Mix well and let the Tomatoes cook.
  3. Once the onions and tomatoes are cooked, add the Spice Powders (Red chilli Powder, Coriander Powder and Turmeric Powder) saute till the Raw smell leaves.
  4. Add the Mutton Pieces, Salt and enough water for the Mutton to cook. Cook for 5 to 6 Whistles.
  5. While the Mutton is cooking, in a mixer jar add the items under "To make Paste" and grind them to a fine paste.
  6. After 5whistles, the Mutton has cooked soft
  7. Now add the grounded coconut Paste. Mix well with the Cooked Mutton and further cook for another 3 to 5 Minutes.
  8. Check for Salt and Consistency. Finally add some chopped coriander leaves.
  9. Transfer to a serving bowl. Hot and Delicious Mutton KUZHAMBU is ready to Serve. Enjoy with Rice, Idli, Dosa, Chappathi and Rotis.
