  3. Take the belly out, let cool, then cut into 3cm cubes. Put them in the wok, don't need add oil. pan-fry till pork oil coming out and the belly turn to brown.
  4. Add crytal sugar, stir-fry till the sugar melts and turn to golden brown, add spring onion, ginger and chili pepper, i also add a star-anise.
  5. Add soy sauce and wine, and 600ml hot water, lid on, simmer for 1.5 hrs.
  6. After 1.5 hrs. lid off. turn up the heat, stir fry to concentrate the sauce. then it's done!
