- Get cashew nuts paste:
- Get Cashew nuts
- Prepare Warm water for soaking and grinding the cashews

- Get Tomato finely chopped
- Take Oil/Butter
- Take Ginger paste or freshly grated
- Get Turmeric powder
- Get Red chilli powder
- Take Salt -
- Prepare Cilantro or coriander leaves chopped finely
- Get Mint leaves chopped finely
- Make ready dahi whisked
- Get Water or more or less
- Take Garam masala
- Get Kasoori methi
- Take tej patta
- Get laung
- Prepare dalchini
- Take jaiphal powder
- Take fresh cream or malai
- Make ready Sugar (optional)
Instructions to make Diwani Handi:
- Soak Cashew in hot water for 30 minutes. After that grind it to make a smooth paste.
- Steam the veggies in pressure cooker.
- Heat the oil in a kadai or handi on medium heat.Once hot add whole spices - tej patta,laung,dalchini. Saute till spices are fragrant.
- Add ginger paste. Saute for 1 minute.Now mix in chopped tomato. Again cook till all the water is gone. Oil may starts to ooze out from the sides.
- Now add turmeric powder, red chilli powder, salt, chopped coriander and mint leaves. Mix well and cook for a minute.
- Now lower the heat and add prepared cashew nut paste and whisked yogurt.
- Mix well and again rise heat to medium. Now add water to make the gravy consistency. Mix well and let it come to a simmer.
- Now add steamed veggies. Mix well and let it simmer for 6-7 minutes. Do stir occasionally.
- Now add garam masala,jaiphal powder and kasoori methi. Mix well.
- Lastly add cream/malai, mix and cook for a minute or two. Then turn off the stove.
