  1. Make ready 3 cup gluten-free all purpose flour (or regular flour)
  2. Take 3/4 tsp xanthum Gum (if you use regular flour, you don't need this ingredient)
  3. Prepare 2 tbsp sugar (or sugar substitute, such as splenda)
  4. Prepare 1 envelope Rapid rise Yeast (1/4 oz)
  5. Take 3/4 tsp salt
  6. Prepare 3/4 cup warm water
  7. Take 2 tbsp olive oil
  8. Take 1 egg

When cycle finishes, turn dough out onto a lightly floured surface. You don't need yeast to make tasty dinner rolls, just baking powder will make them rise. Instructions to make Speedy Dinner Rolls:
  1. In a large bowl, 1 1/2 cup flour, xanthum gum, sugar, yeast, & salt. Stir in water, oil, & egg until blended. Stir in enough of the remaining flour (about 1 cup) to form a soft dough.
  2. On a floured surface, knead dough until smooth & elastic, about 8 minutes, adding more flour to prevent sticking. Shape into a ball. Place in a large oiled bowl, turning to coat. Cover loosely with a damp cloth. Let rise in a warm place for 15 minutes.
  3. Spray a 9-inch square baking pan with cooking spray. Punch down dough. Place in prepared pan, patting to an even thickness. Cut into 12-16 squares.
  4. Fill a large shallow pan with 1 inch of boiling water. Place a wire rack on top. Place the pan of rolls on rack, cover with a damp cloth. Let rise for 20 minutes.
  5. Preheat oven to 400°F. Sprinkle top of rolls lightly with flour, if desired. Bake until rolls sound hollow when tapped, about 10-15 minutes. Place pan on wire rack & cool for 10 minutes. Serve warm.

Add salt and beaten egg; blend well. Add flour, one cup at a time until soft dough if formed. Good flavor and hearty texture; my family loves these rolls. To add variety I also brush with melted butter before cooking and then sprinkle chopped rosemary and sea salt on top of about half the pan of rolls. Other good toppings are fine grated Parmesan cheese poppy seeds or sesame seeds.
