Instructions to make Ragi Savoury Monkey bread:
- Mix sugar in water and milk. Sprinkle the yeast. Mix,cover and leave for 15 minutes
- Add flours to a deep vessel
- Add salt and the spice powders. Roast garlic and onions in some oil. As it turns translucent,remove and add to the flour.mix well
- Add the yeast mixture to the flour mixture. Mix with a wooden laddle. Add 1 1/2 cup warm water. Mix with the laddle and leave covered for 10 minutes.
- Now put the dough on a plain surface. Using sufficient water if required knead the dough for 12 to 15 minutes.
- Grease a vessel and put the dough in it. Leave to proof for 1 hour
- In the meanwhile grease a 12 cups bundt pan. Keep the garnishes ready. Mix seasame and flax seeds in one cup. Mix melon and pumpkin seeds in another cup. Melt butter in another cup
- Pinch small lemon sized balls,roll in the melted butter,next roll in one of the seeds mixture. Place in the Bundt pan.
- Make such ball,roll in butter,Alternately roll in seeds mixtures and place in the pan. Make another layer over the first layer.
- Preheat oven to 200°. Now reduce temperature to 180℃. Brush the buns with remaining butter.Sprinkle with red chilli powder,more herbs and rosemary. Place in oven and bake for 45 minutes. Can brush some milk half way through to moisten.
- Here comes the beautiful crusty ragi masala monkey bread ready and rightly baked. Brush with some butter.
- Leave for 5 minutes. Now demould on a plate.see the beautiful crust all over.
- Invert it back to serve. Lovely pull apart. Soft from inside.
